Working with fruit from Stillwater Creek Vineyard is always a pleasure and the 2016 vintage Semillon was no exception! Harvested at the peak of ripeness, I wanted to emphasize varietal character while maintaining balance and finesse. As with all our our white wines, we perform a very light press and handle the juice with care throughout the fermentation process. As in prior years, we allow our Semillon to complete ML fermentation that, along with barrel fermentation, gives this wine a wonderfully round, full body and silky smooth finish. Enjoy!
One third of this Semillon was barrel fermented for ten weeks in 100% new French oak / Acacia hybrid barrels. Two thirds was fermented in stainless steel. The wine was then allowed to complete malolactic fermentation in stainless steel tanks with an extended sur lie aging to build body and mouthfeel.
