2004 Soirée

blend of 64% stainless steel fermented Chardonnay and 36% barrel fermented Semillon, Soirée is an enjoyable wine with hints of baking bread, cake, and green melon on the nose and flavors of apricot, citrus, oak and dried alfalfa throughout. The Chardonnay provides a crisp acidity while the Semillon lends a creamy texture and a long, full finish with butter and pear notes.
Winemaking: The goal for this wine was to build a white wine that would pair well with seafood and salads. The full body of barrel fermented Semillon, together with the crisp acidity and clean finish of Chardonnay fermented in stainless steel, makes this an easy match for steamed clams, mussels and Caesar salad. The final blend was chosen by a panel of experienced wine tasters in a blind tasting to be the most enjoyable combination of the two base wines. Ah, democracy at work! Cooperage: The Semillon was barrel fermented in 100% new American oak. The lees were stirred once per week for four months before being allowed to settle prior to bottling.
