2011 Semillon

Working with fruit from Stillwater Creek Vineyard is always a pleasure and the 2011 vintage Semillon was no exception! Harvested at the peak of ripeness, I wanted to emphasize varietal character while maintaining balance and finesse. As with all our our white wines, we perform a very light press and handle the juice with care throughout the fermentation process. As in prior years, we allow our Semillon to complete ML fermentation that, along with barrel fermentation, gives this wine a wonderfully round, full body and silky smooth finish. Enjoy!
The Semillon was barrel fermented for three weeks in 2/3 EBC new American oak and 1/3 in Marchive new American oak. The wine was then allowed to complete fermentation in stainless steel tanks with an extended sur lie aging to build body and mouthfeel.
