One of the hottest, driest grape growing regions in Washington State, the Wahluke Slope sandy loam and deep minerals bring out a character rarely seen in Sauvignon Blanc. The acacia barrel fermentation and aging lends this wine a floral nose and mouthfeel rarely seen in Sauvignon Blanc. Hints of spice and a rich, perfumed nose open into flavors of ripe stone fruit and orange blossom. Moderate acidity gives this wine a lingering, almost tangy finish.
Our 2012 Sauvignon Blanc was fermented and aged in two lots of equal volume. The first lot was cold fermented in stainless steel for approximately 21 days and remained in stainless steel for the aging process and secondary fermentation. The second lot was barrel fermented and aged in 100% new Acacia for approximately 6 months. The two lots were then blended together prior to bottling.
